Green Lentil Soup Recipe
Lentils are legumes that are rich in protein and in fiber. They are relatively easy to cook. They come in a few different colors from red, black, brown and green. They are grown in pod form. They are eaten around the world since it is relatively low in cost and stores easily without spoiling for a long period of time. For our purpose, we are going to use the green variety but this recipe can be created with the brown lentils as well.
Green Lentil Soup
2 tablespoons vegetable oil
1 large onion, chopped
1 cup of green lentils
2 large carrots, peeled and cut into large round pieces
1 tablespoon cumin powder
8 cups of water
Juice of two lemons
2 pieces of garlic, minced
In a stockpot, heat the oil, add the chopped onions and sauté for about 5 minutes until the onions are translucent. Add the chopped carrots and the lentils and sauté for a few more minutes. Add the cumin powder and the water. Cover and bring to a boil on medium heat. Lower the heat to low and simmer for about 40 minutes until lentils are done. Turn the heat off, add the lemon juice and the minced garlic. Season to taste and serve.
